Authentic Gourmet International Cooking


This chicken is so tasty and its crackling crispy skin is created  without deep frying or breading. I  made this for the first time tonight and already I can say it is going to be a favorite dish as I got the thumbs up from my husband and daughter!! In my next blog I will give instructions on how to make this delicious chicken.


  • 8 bone-less, skin-on chicken thighs or bone-in chicken thighs with skin (use kitchen scissors to remove bone)
  • 1 tablespoon  kosher salt or sea salt
  • 4 tablespoons  coconut oil or ghee or if no allergies peanut oil
  • 2 teaspoons seasoning blend of choice (optional)

Salted cod/ Trinidad ” Buljol” or Spanish” Bacalao” is delicious with sliced boiled eggs or with Coconut bake.
